Keto Approved Spinach Stuffed Chicken Easy Keto Recipe

This is another simple Keto approved recipe that the entire family loves. This keto approved stuffed chicken is to die for! It is very easy to make and the feta cheese gives it a bit of a tang, that even the kids enjoy. I have made this recipe for friends and visiting family members and it is always a hit.

Keto Approved Spinach Stuffed Chicken Breasts Ingredients

Ingredients

  • 4 Chicken Breasts
  • 8 oz cream cheese
  • 4 oz feta cheese
  • 1 tablespoon garlic powder
  • 2 cups spinach
  • salt
  • pepper

If you wish to switch things up, you can substitute mozzarella cheese in place of the feta cheese – this will remove the tangy taste (which I personally love!). I highly recommend buying block cheese and shredding it yourself. You would be surprised by how many hidden carbs are in pre-shredded cheeses to stop them from sticking.

I have even added in bacon bits to this recipe before. Yum!

Keto Approved Spinach Stuffed Chicken Breasts UncookedDirections

  1. Preheat oven to 425 degrees.
  2. Cut chicken breasts so they are almost almost split through, but leave them like a pocket.
  3. Combine cream cheese, feta cheese, garlic powder, and spinach. (I use my hands because it is easier than utensils).
  4. Place chicken breasts in baking dish and fill with cheese and spinach mix.
  5. Sprinkle with salt and pepper.
  6. Bake for 30 minutes uncovered.
  7. Enjoy!

Prep Time: 5 minutes
Cook Time: 30 minutes

An easy dinner recipe that the whole family will love.

  • 4 Chicken Breasts

  2. Cut chicken breasts so they are almost almost split through, but leave them like a pocket.

Marvel’s Cloak & Dagger: Who Is Mayhem? (Spoilers Ahead!)

The season finale of Marvel’s Cloak & Dagger was last night and it blew me away. Full warning, this article has some minor spoilers. Minor meaning what I am going to touch on is a big deal – for Season 2. It will give away a character we lost in this episode and touch on a new one that was introduced. So if you have not seen this episode yet and want to go in to it completely in the dark, stop reading now. If not, keep on going.

O’Rielly No Longer

At the end of Cloak & Dagger we see Connors shoot (and presumably kill) Detective O’Reilly. Then, at the very end, the stinger if you will, we see her emerge from the lake looking, well, different. She has crazy eyes and was obviously infected with whatever Roxxon has been drilling for. I knew immediately that this was a big deal. But, as I have admitted in the past, I know nothing about Cloak & Dagger from the comics. All I know about them is what we see in the big crossover events. Nope, I have never given their stand alone comics a chance. But I have a feeling all of that will change now.

Who is Mayhem?

A quick Google search of the name O’Rielly brought me right to a lot of information about a character from the comics – Mayhem. Her backstory reveals that she was indeed a detective that learned to trust Cloak & Dagger. In the comics, the divine pairing gets their powers from some pharmaceutical company’s experiments. And in the comics, O’Reilly goes to investigate one of their warehouses. She is exposed to a gas and then dies. Cloak & Dagger find her and use their darkness and light to try to revive it. It appears unsuccessful, but she then reemerges as Mayhem.


Her powers? She exudes a gas from her pores that have a paralyzing and hypnotic effect. It seems like Mayhem is a very gray character – not so black and white. She is a villain and a vigilante. I have a feeling she will be a major part of Season 2 – and I cannot wait for it.

My girls are getting a little older – they are 5 and 7 now. My husband and I know that it is only a matter of time before they are out of the house, so we have family time every night. We play games, but we also cuddle up and watch a show or two. One of our favorite series to watch is Steven Universe. It is something that the entire family can enjoy. It is appropriate for kids, but the plot is really entertaining to adults. We were excited to get an advance copy of the latest DVD, Steven Universe: The Heart of the Crystal Gems, and we binged it in just two days. Yes, it was that good.

Not to mention the LGBT+ amazingness we got with Ruby and Sapphire. I shed some tears, not going to lie.

Avengers: Infinity War Bonus Features: Worth The Watch?

Avengers: Infinity War was released this week on digital, and is coming home to DVD and Blu-ray on August 14th. I have said it many times before but one of my favorite things about purchasing a film like this is the bonus features. Deleted scenes, gag reels, and commentary really give you a feel for the movie that you didn’t have before. So when I was sent Infinity War, before even watching the movie again, I tackled the bonus features. Now I am going to tell you if they are worth the watch.

DUH! Yes! Of course they are! Come on guys, do you know me? My love of Marvel had me literally crying during many of these features. So what do we get exactly? Commentary of course. Deleted scenes. A gag reel. The background story of Thanos, and my personal favorite, a Directors Roundtable.

Deleted Scenes

I always like the deleted scenes because it shows you part of the movie you didn’t see. These ones are no different. There are four, and they are all pretty amazing. They are short so it won’t take you long to go through them all. My favorite was of course the Guardians one, but Happy Knows Best added some much needed humor.

Gag Reel

Speaking of humor, let’s talk about that gag reel. This particular gag reel is short and sweet. Just 2 minutes long. But it had me cracking up – something that I know we all need after watching Infinity War. I especially loved the Paul Bettany clips because I know from interviewing him he is a funny dude. Not to mention all the dancing – so many awesome dance moves. It might make sense to watch this last because some of the the other stuff is intense and emotional. I admit, I totally watched this again after watching all the others, to try to make myself laugh (and it barely worked).

The Mad Titan

Being a oretty hard core Marvel comic book fan, I know quite a bit about Thanos. He is a major part of the Marvel Universe, and we have been seeing and hearing about him on the big screen since Avengers 1. This featurette is pretty amazing and dives in to Thanos and how he fits into the MCU, and who he truly is. It really makes you think and realize that he has been thought about as a main villain since the very beginning. It kind of makes you feel for Thanos. Which I hate to admit.

Strange Alchemy

This featurette is about all of the characters teaming up together. Why and how they were teamed up the way they were. I kind of love this one. Especially when we hear about Thor and the Guardians of the Galaxy. Hearing the Russos talking about combining things that really don’t seem to fit together – and how they pulled it off – gave me chills. As a comic book fan, I love a good team up. So learning about the behind the scenes of it was amazing.

Beyond the Battle

Titan:

The battle on Titan is one of my favorite parts of the movie. It hurts. It pulls at your heart strings. But man, it is amazing. What is really cool about this featurette is we get a lot of information about how the scenes on Titan were created. You learn a lot of fun facts, for example, the Doctor Strange and Thanos discussion on Titan was about twice as long as it was in the movie before they cut it down. In this you see the whole process of creating some incredible scenes, making it totally worth the watch. They even touch on one of the most emotional moments in the film that happens on Titan. And yea, I was a sobbing mess at this point.

Wakanda:

This is one of the coolest battles in Infinity War – and probably the most epic battle in the entire MCU. So seeing what went in to it was pretty cool. The entire cast and the Russo Brothers talk about the battle and filming that scene. They even talk about creating the world of Wakanda. I mean, it is amazing to see and will make you appreciate that scene in the film even more.

Directors Roundtable

Like I said, this is hands down my favorite bonus feature of Avengers: Infinity War is the Directors Roundtable. So many brilliant minds in one room together – I pretty much started sobbing before they even opened their mouths. I just loved listening to them talk about how they brought the whole universe together. From the very first Iron Man movie all the way to Ant-Man and The Wasp. Learning how they passed the baton to each other – and truly seeing how much they love these characters on their faces. If you only watch one bonus feature, make it this one.

Avengers: Infinity War is now out on digital (eek!) and comes home on blu-ray August 14th. One of my favorite things about a movie’s home release is all the bonus features that we get. From gag reels, to deleted scenes, to commentary – there are so many amazing things we can learn about our favorite films. When I first saw the list of bonus features that would be a part of the Avengers: Infinity war home release, I was floored. Each and every one sounded more exciting and amazing than the last. It looks like we will really get to dive in to Thanos’ background. But for me, the director commentary is where it is at.

I knew without even watching the bonus features that this would be my favorite one. There is nothing quite like diving in to the brilliant minds that take these worlds and stories from the pages of the comics and put them on the big screen. I haven’t quite brought myself to watch this one yet though, because I know it will hurt my heart. The collection of directors includes James Gunn, who was recently let go from the Guardians of the Galaxy Vol. 3 project. I am willing to bet I won’t make it through this without shedding some tears.

  • Ant-Man and The Wasp #4 (of 5): A short run that had me hooked from the first issue! Looking forward to reading this one!
  • Death of the Inhumans #2 (of 5): I love the Inhumans so when the show flopped, it made me really sad. This series is bringing in all of my favorites, and I cannot wait to see where it goes!
  • Infinity Wars #1 (of 6): I mean, if you didn’t read Infinity Countdown, and now this, I don’t think you are a real Marvel fan. This is an AMAZING crossover that just keeps getting better. And I wouldn’t be surprised if it somehow connects to the MCU and Avengers 4.
  • Marvel Rising: Ms. Marvel & Squirrel Girl #1: You can’t go wrong with Squirrel Girl.
  • X-Men Gold #33: One of the best X-Men teams. Ever.
  • X-Men Gold Annual #2: Ditto.

Those are all the comics I am picking up this week, but here are some I feel I need to mention for those of you that are not Marvel or Die fans like me…

Teen Titans GO! To The Movies is Full of Potty Humor – But Worth A Watch

I took my whole family to see Teen Titans GO! To the Movies opening weekend. We laughed and genuinely had a good time. This is a fun movie that is good for the whole family. Everyone will have a good time. Yes, it is predictable, yes, there is potty humor, yes the ending might make you choke on your soda – but is an all around fun film that I recommend for the whole family. In order to enjoy the film you will not need to have watched the television show, but they do make some references to things that have happened in the show.

Potty Humor

If you have seen the Cartoon Network show, Teen Titans GO!, then you know there is a lot of potty humor. The movie is no different. In fact, there is a scene where every single character talks about pooping in a prop toilet. And it is hilarious. That mixed with some butt and fart jokes, really make this movie fun for little ones (and adults). I mean, who doesn’t like bathroom humor? If you say you don’t, you are lying to yourself. You do. I was afraid the movie would go over the top with it, but they didn’t. For me it was just the right amount to not get super annoying.

Predictable But Fun

This movie is predictable. I mean, aren’t most kids movies? But one of the things I love about this film is that they know it. They make fun of themselves. Something Deadpool 2 tried to do and failed at, in my opinion. There is one point where they mess with time and, of course, it doesn’t work. They joke saying who would have seen that coming. And then later, when the “twist” is revealed, Raven says she saw that coming from a mile away. Teen Titans GO! To The Movies is predictable without ruining the movie. I knew what was going to happen from about 15 minutes in, and I still enjoyed it.

That Last Line Though…

This is a very minor spoiler, but the last line is Robin literally saying “Kids, ask your parents where babies come from.” Yup. It is. Luckily my girls did not even really catch on and never said a thing. My jaw dropped and I laughed nervously. Honestly, a great way to end a movie. But be warned, in case your kids are ones that might pick up on it. And don’t forget to stay for the mid-credit scene! I need to know what it means!!

Is Teen Titans GO! To The Movies the best movie of the year? No. It isn’t even the best comedy of the year. But is it really fun? Yes. Will the whole family laugh and have a good time? Yes. Heck, even the final battle was a pretty great action scene by superhero standards. See it in theaters now!

My husband is not a picky eater at all. But there are certain meals that top his list. Ones that he could eat all day, every day, and this keto breakfast lasagna recipe is one of them. We took a recipe from Maria Emmerich and changed it just a little bit to better fit our family, and this is the final product.

My husband literally licks his plate when he is done with dinner – it is THAT good! Read more about my Keto journey here.

Keto Breakfast Lasagna Ingredients

Ingredients

  • 18 eggs
  • 1 lb. cooked ham slices from the deli
  • 1 cup mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 lb hot ground sausage ( we love Johnsonville)
  • 16 oz cream cheese
  • 1 cup beef broth

Keto Approved Breakfast Lasagna uncooked

Directions

  • Grease a 9×12 baking pan and preheat oven to 325.
  • Soft scramble the eggs using NO milk.
  • Gravy: Brown ground sausage. Then slowly add beef broth and cream cheese. Stir and simmer until you have a slightly thickened consistency. Salt and pepper to taste.
  • Start with a thin layer of gravy. Top with eggs. Then ham. Then mozzarella and Parmesan cheeses. Repeat three times.
  • Bake uncovered for 25 to 35 minutes.

Prep Time: 20 minutes
Cook Time:
35 minutes
Total Carbs:
 5 carbs per serving

I hope you enjoy this meal – it is totally one of our favorites in our house. I suggest prepping it in the morning and storing it in the fridge until you are ready to cook it. This will not effect cook time, and then you won’t feel so rushed at dinner time.

Why You Should Binge Watch Marvel’s Cloak & Dagger Before the Finale

Marvel’s Cloak & Dagger hooked me from the first few minutes, and I haven’t looked back since. You probably know I am a huge Marvel comics fan, but some heroes I have never known much about are Cloak & Dagger. I love when they pop in to help save the day in crossover events – but I have never checked out their stand alone comics. From what I do know, their origin differs from what we see in this show, but Freeform is killing it with their interpretation. The season finale airs next week (August 2nd), and if you haven’t watched the show yet, get ready to binge all 9 episodes.

Slow Burn…That Pays Off

I admit, this show is a bit of a slow burn. The first few episodes are filled with dialogue so that you get to know the characters involved. However, powering through will really pay off. Each episode does have some good action and story telling, so you shouldn’t be bored out of your mind. And by the time you get to my favorite episode, episode 7, you will be on the edge of your seat. There are several sub-plots, but they all make sense to the main story.

The Characters Are All Important

There are a few people that entered the show and I thought they were filler characters. You know, someone to hang out in the background and throw a line in here or there. One of them was Evita. Another was Liam. Boy, was I wrong. Really wrong. These have become two of my favorite characters that are propelling Tandy and Tyrone’s journey forward (and sometimes backwards). But I love them for it.

The Music

There is really nothing to say except that the music compliments every scene perfectly. When I interviewed Joe Pokaski, he said he takes the song selection very seriously. And I can tell that he does.

Every Episode Ends With A Bang

Yup, you read that right. Every single episode will leave you like WOAH. There are giant cliff hangers where our heroes are in danger, or you just don’t know what is around the corner for them. I am always left wishing the next episode was here. But instead I have to be in my head about what just might happen for a week. The writing is phenomenal.

If you are not watching this show, you are truly missing out. Marvel fan or not, this is something you can enjoy. Tyrone and Tandy have been on an incredible journey so far, and I am excited to continue it with them.
