I have two young daughters and I want more than anything to see them succeed in life. I also want them to be their healthiest selves, so I was thrilled when DOLE teamed up with Marvel for the Powering the Hero Within campaign. It is one of the many reasons we love their products.

I recently got a box full of goodies from Tastefully Simple. It was their Easter Collection and designed to help you with practically every part of the meal for Easter Dinner. I was so excited to dig in and start baking and cooking. My absolute favorite recipe is the Robin’s Nest Cake. It was really easy even though it looks somewhat daunting. Oh, and it was delicious!
Taco Tuesday is a big day in our house, but because my husband and I eat keto, we have not been able to have the shells for a while now. For the longest time we enjoyed our tacos as a salad, which was fine, but then we decided to make our own shells from shredded Parmesan cheese. This is actually super easy, although it seems intimidating at first. We will never go back to the ways of just a taco salad! We have also come up with our own recipe for taco seasoning to avoid all of the carb fillers that are in pre-packaged seasoning.
My family and I have been living the keto lifestyle for the last year, and we couldn’t be happier. One of my favorite things to do is wing it in the kitchen with low carb ingredients. This is how one of our favorite meals was born – Keto Bacon Cheeseburger Soup! YUM! My girls loved this so much that they asked for seconds (totally unheard of with these kids). This recipe is super easy and takes less than 30 minutes. Plus, you can easily customize it to your own tastes.

If you have been following my blog and social media at all, you know I have been living the low carb and keto lifestyle for about a year now. Yes, I cheat here and there, but I pretty much stay on track. So when my family and I went on a Disney Cruise I knew I had to make keto work for me. It was actually a lot easier than I expected. Sure I had a milkshake or a dessert here and there, but I didn’t binge out on them. And if you wanted to stay strictly keto while onboard, Disney is very accommodating.
My husband and I have been eating keto for a year now, and we are always trying to come up with new recipes that the whole family will enjoy. These low carb keto baked turkey roll-ups are one of those. My 7 year old will ask for them by now at least once a month. I love that I can customize these on an individual basis to fit my family’s preferences. For example, I put no sauce in my youngest daughter’s roll-ups, extra sauce in my oldest daughter’s, and fresh basil in my husbands! This way every one gets what they enjoy.
My family is always on the go, especially during the school year. My daughters have sports and other after school activities so dinner is usually a quick event. This stir fry recipe is something I came up with while trying to have a meal prepared in less than 15 minutes, and still be keto and low carb approved. It quickly became a hit with everyone! Plus it is easy to modify with different veggies and sauces!
As I am sure you know by now, the hit book series Artemis Fowl is soon to be a major motion picture from The Walt Disney Studios! Yea, I am super excited! This was one of my favorite series to read growing up, and I have now been introducing my seven year old to the series. We are on the third book and she is hooked – just like I was. To help celebrate the series, we made some Artemis Fowl inspired milkshakes together, and I am going to tell you how you can make them too.
One of my favorite things about the keto diet is the fat bombs. Sounds crazy, I know, but they make the perfect after dinner snack and help curb all of my sweet cravings. Sweets have always been my downfall, so these are the perfect way to help me stay on track, without feeling like it! I tried several different Peanut Butter Cup fat bomb recipes before creating my own. This one is more of a tart recipe than a cup, since they are just layered. Still, they are delicious!
