If you know anything about me, you know that I am a HUGE Marvel fan. You also might know that I recently changed to the Keto way of eating. In just two and a half months, I have lost over thirty pounds and have a whole new lease on life! My energy and confidence are renewed! So when I decided to create a super fun Avengers: Infinity War themed dessert, I knew it had to be Keto friendly so that I could enjoy it too. So my husband and I put our heads together and came up with some amazingly delicious Keto approved Infinity Stone Macarons! Each macaron is only 2.5 net carbs – so enjoy, just don’t share them with Thanos!
As you likely know by now, I have changed my way of eating to a Keto lifestyle. It has been about two months know and I feel better than ever. I knew going in to this that I would be spending nearly two weeks (12 days) at the most magical place on Earth, Walt Disney World. Being Disney Vacation Club members allowed us to be able to escape this snowy, frigid, and downright depressing winter, and enjoy some fun in the sun. It is no secret that Disney is our favorite vacation spot – I mean, it is why we joined the DVC. But there are temptations everywhere for someone trying to cut out carbs – here is how I survived my extended Disney vacation on Keto!
If you haven’t figured out that we are a Disney family by now, there is probably no hope for you. Ha, just kidding. But honestly, we are Disney Vacation Club members and love going “home” two or three times a year. We have several must dos when we go, which includes rides, character meet and greets, and of course, restaurants. One that the entire family looks forward to every visit is breakfast at The Crystal Palace at Magic Kingdom.

I was lucky enough to walk to red carpet at the LA premiere and trust me, this movie is amazing. I started the Keto way of eating a month ago now. As you might know already, my last update was at the two week mark. I had lost 10 pounds, going from 174 to 164. With most diets, it gets harder to lose as time goes on. Which makes sense since you start to have less to lose. Well, after one full month of Keto eating (January 1st to February 1st), I now weigh in at 159. That is 5 pounds in 2 weeks, and 15 pounds in one month – which is pretty good. I stuck to Keto eating and working out almost daily. However, in the interest of honesty, I did “cheat” a little bit (I had a vodka, water, and MIO drink a couple of times – which is Keto approved and didn’t kick me out of Ketosis).
As you might know already, I started the Keto Diet with Intermittent Fasting two weeks ago. I have succeeded with no cheating – plus a 30 minute workout (21 day fix) 6 days a week. My weight at the start was 174 pounds (I hate admitting that). Which is significantly more than I care to be. My first goal is 155 (healthy weight according to BMI) and my overall goal is 140. One day about a month ago I looked in the mirror and was disgusted. A while back I lost a lot of weight, and was looking and feeling great. Well, life happened and I put back on a lot of those pounds (luckily not all of them). Some of my friends had recently lost a lot of weight on the Keto Diet (high fat, medium protien, low to no carbs), so I decided to do some research. My husband is a science guy, and doesn’t believe anything unless it is proven. And so he decided to do his own research. We both came to the same conclusion – Keto was for us.
Something that I don’t think anyone outgrows, is fruit snacks. My husband and I still love snacking on them, and of course, so do our young daughters. They are snacks for school lunches and snacks for home. We try to include them in just about everything we do – including celebrating holidays. The Garden Grill is always on our must do dining list when we visit Disney World. In my opinion, it is one of the best character meals that there is, for several different reasons. A Smith Family visit to Disney World would just not be the same without it. My in-laws will be hitting Disney World with us in a few months and we knew right away the one breakfast we had to make sure they did not miss is The Garden Grill. I am thrilled to say that we were able to book it – and cannot wait to show them why we love it so much!
