Keto Baked Turkey Roll-Ups

My husband and I have been eating keto for a year now, and we are always trying to come up with new recipes that the whole family will enjoy. These low carb keto baked turkey roll-ups are one of those. My 7 year old will ask for them by now at least once a month.

I love that I can customize these on an individual basis to fit my family’s preferences. For example, I put no sauce in my youngest daughter’s roll-ups, extra sauce in my oldest daughter’s, and fresh basil in my husbands! This way every one gets what they enjoy.

Ingredients

  • 2 pounds oven roasted deli turkey (thick cut)
  • 13 oz ricotta cheese
  • 1 cup mozzarella cheese
  • 1 egg
  • 1/2 cup tomato/pasta sauce
  • 1 tablespoon Italian Seasoning
  • 1/2 tablespoon garlic powder
  • 10 cherry tomatoes (sliced)

Directions

  1. Preheat oven to 325 degrees.
  2. Combine ricotta, mozzarella cheese, egg, italian seasoning, and garlic powder in bowl. (called filling from here on out)
  3. Spread filling mixture on a slice of turkey and fold in half.
  4. Spread more filling on the turkey slice.
  5. Add tomato sauce, as desired (I make some without for my daughter as she does not like sauce).
  6. Add 3 tomato slices.
  7. Roll up the turkey slice and place in baking dish.
  8. Repeat for all turkey slices.
  9. Top with sauce and mozzarella cheese as desired.
  10. Bake 20 to 25 minutes.

Cook Time: 25 minutes

These baked turkey roll-ups are super easy to make and taste delicious. The best part is you can customize the filling to what your family enjoys. For example, I always make a few without sauce because my daughter does not like it.
