The Most Delicious Keto Friendly Cheesecake You Will Ever Eat

Keto Cheesecake Recipe

I am a big sweets girl. So when it comes to living the Keto lifestyle, that is something I tend to miss out on. I recently stumbled across a cheesecake recipe that was keto approved. With a few adjustments we made it our own. And it is now a go to dessert in our home.

This is what we will be taking with us to parties all throughout the holiday season. This time of year is when I tend to slip up and I refuse to do that this time around.

This cheesecake is sure to curb any sweet-tooth cravings you have. It is so good that your non-keto eating friends and family will love it too (and have no clue it is low carb!).

Ingredients

Crust:

  • 3.5 tablespoons unsalted butter
  • 1.5 ounces unsweetened backing chocolate
  • 1/3 cup powdered erythritol
  • 1 teaspoon stevia glycerite
  • 1 large egg
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt

Filling:

  • 32 ounces cream cheese
  • 3/4 cup powdered erythritol
  • 1 teaspoon stevia glycerite
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon fine sea salt
  • 3 large eggs

Cinnamon Swirl:

  • 6 tablespoons unsalted butter
  • 1/2 cup powdered erithritol
  • 1/2 teaspoon stevia glycerite
  • 1 teaspoon vanilla extract
  • 1 tablesppon ground cinnamon
  • 1/4 teaspoon fine sea salt

Directions

  1. Preheat oven to 325 degrees.
  2. Grease 8-inch springform pan and line with parchment paper.
  3. Crust: Heat butter in a saucepan over high heat, stirring often. One butter foams remove from heat and allow to cool for 10 minutes. Slowly add the chocolate (chopped) to the butter over medium-high heat stirring constantly. One melted, add erythritol, and stevia. Let cool in fridge. Once cool, add egg, cinnamon, vanilla extract, and salt. Place mixture in the springform pan, spreading to cover bottom completely.
  4. Filling: Beat cream cheese, erythritol, stevia, almond milk, vanilla extract, almond extract, and salt until well blended. Add eggs one at a time, mixing on low speed until just blended. Pour half the batter into the springform pan.
  5. Cinnamon Swirl: Heat butter over high heat, stirring often until it foams. Whisk in erythritol, stevia, vanilla extract, cinnamon, and salt. Remove from hear and let cool slightly.
  6. Spoon half of the cinnamon swirl on to the filling. Using a knife, cut the cinnamon swirl through the batter several times, making a marble effect.
  7. Top with remaining filling.
  8. Top with cinnamon swirl and cut in for marble effect.
  9. Water Bath: Wrap aluminum foil entirely around bottom and halfway up the sides of the springform pan. Place cheesecake in a roasting pan and place in the oven. Pour hot water into the pan so that it comes halfway up the sides of the springform pan.
  10. Bake for 55 minutes or until center is almost set.
  11. Remove from over and let cool completely in pan before removing it.
  12. Refrigerate for 4 hours before serving.

Prep Time: 15 mins
Cook Time: 1 hour 15 minutes, plus 4 hours to chill
Servings: 12 servings, 7 carbs each

My entire family has been watching Star Vs. The Forces of Evil since the first episode aired on DisneyXD. It hooked us right away, and it is something we always look forward to watching together. The Queens

One of the things we totally love about the show is getting to know all the different Queens. My daughters favorite has been Eclipsa (she loves the villains like her mama!), but this book has opened up a whole new world of Queens! Festivia the Fun has become her new favorite Queen after reading through this book. Honestly though, the best part about this spell book is that there are several pages for her to add her own story. She is excited to officially be a “soon to be Queen” in the back of The Magic Book of Spells!

Installation is a Breeze!

I admit, the box arrived and I passed it right over to my husband. He is the designated setter-upper in the house, as my girls would call it. In less than 10 minutes we had both cameras hooked up and connected to our phones so that we could keep an eye on things. It really couldn’t have been easier!

If you think that installation sounds easy, the use is even easier! Using the Momentum mobile app, I can receive real-time motion and sound alerts straight to my smartphone! I even have access to a two-way audio microphone, which I use to let me girls know I have eyes on them. We opted to put one facing the front door, so we know who is coming and going at all times. And the second is in our play room – meaning my girls get away with nothing! It has made cooking on the first floor, and allowing them to play on the third floor, a lot less stressful.

How to Plan the Best Mother Daughter At Home Spa Day!

Mother Daughter Spa Day

I have two young daughters who I love more than anything. Whenever I have the opportunity to do some fun mother/daughter activities with them, I seize it. The three of us recently spent a day turning our home in to a spa and getting some much needed rest and relaxation. With the stress of school back in session, along with after school activities, this was a chance for all three of us to mellow out and bond. It was the hard reset on our relationships that we needed, and I highly recommend it, I can’t wait until they’re a little older and I’m able to take them to a proper spa such as the Lake District’s most luxurious spa.

Paint Each Other’s Nails

My daughter LOVE to get their finger and toe nails painted. They would change the colors every day if I let them. What kind of spa day would it be if we didn’t paint our nails? I thought it might be fun (and maybe a little crazy) to let the girls paint my nails. This ended up being a huge highlight of the day, and they now ask me every day if they can paint my nails!

Pamper Yourselves with Bath Bombs

What is better than a nice hot soak in a tub? I am not sure but I can tell you it is so much more fun with bath bombs! My girls are obsessed with these. Adding fizz, colors, and awesome smells to the tub – sign me up! I don’t get in with them since, well, they are a bit to big for that. But I did set up our oil diffuser in the room, dim the lights, and read to them while they relaxed. It was a great moment.

Facial Masks for the Win!

My girls are still too young for facial masks (if you know of any kid safe ones, please tell me!), but that doesn’t mean they can’t get in on the fun with me. I let them put my mask on me and they were giggling the whole time. Sure, it was all up in my eyebrows, but the memories we made will last a lifetime – eyebrows grow back.

Watch a Mother/Daughter Film

There is nothing better than cuddling up in my big king size bed with my daughters and putting on a good movie. This day we decided to watch Freaky Friday, because it all about the mother/daughter relationship. We laughed together and we cried together. This movie truly helps kids and their parents understand each other. And it was just what we needed.

There have been some mornings we spent yelling at each other, but this spa day really helped heal that! We have now planned to do this once a month, and it something I know all three of us will look forward to!

Wrong decisions seem apparent for Sam, a convicted computer hacker, whose single, jaded and barred from using the Internet. Forced to crash on his brother’s couch, he makes ends meet by working at the local Twistee Treat and stealing mail while disguised as a postal worker. Then, a single pink envelope changes everything. Handwritten by a heartsick Josie to her late husband and fallen Marine, the tender missive awakens something in Sam. Desperate to be worthy of such love, he conspires to meet the beautiful, young war widow, longing to become a better man. As the two grow closer, she warms to the idea of a new chance at love, but not before Sam’s past comes knocking in the form of an FBI agent looking for missing bitcoins.

My Thoughts

This movie really surprised me! I settled down to watch it by myself, and my husband ended up joining me about ten minutes in to it. Both of us quickly got sucked in and were invested in the characters. We laughed. A lot. No Postage Necessary is super cute and great date night movie. This is a movie I will probably watch again – and I can’t say that about a lot of films. I definitely recommend it if you are looking for a fun film!

Must Have Video Game Series: Donkey Kong Country: Tropical Freeze

If you didn’t know already, my family loves to game! We game together pretty much every single night. It is our family time before bed. Sometimes this includes board games, but it is usually video games. We rotate who chooses the game for the night, and we just added a new one in to the mix. I was thrilled to see Donkey Kong Country: Tropical Freeze show up at our door because I have always loved the Donkey Kong games. I couldn’t wait to share it with my daughters.

What We Love About It

We have been loving playing Donkey Kong Country: Tropical Freeze for a few reasons. First of all, the nostalgia for my husband and I is there. We remember playing Donkey Kong when we were kids, so it is really cool to share that with our children. While this isn’t a four player couch co-op, it is a two player one. But that doesn’t mean we can’t still have fun with it as a family of four. We take turns cheering each other on – and even play on “teams” sometimes. My husband’s favorite part about this game is that once you beat a level, you can replay and try to beat your time with Time Attack. This is really fun and great for the competitor in you!

We were hoping that with 3 playable sidekick characters, there would be a four player mode, but no worries! This game is still a blast (or should I say freeze) to play. My husband and I enjoy playing the classic characters, while our girls often opt for the new Funky Kong and Funky Mode. Kids, amiright?

Who It’s For

This game is for any fan of the classic Donkey Kong. It plays very similar, with some upgrades of course. It is also for anyone who likes to game by themselves. Donkey Kong Country: Tropical Freeze is the perfect one player game. Ideal for long car (when you aren’t driving of course) or plane rides. You don’t need to super concentrate on a story so if you get interrupted, it wouldn’t be the end of the world. I highly recommend this game for new and old fans of the series alike!

Tips on Choosing After School Activities From Go Organically Fruit Snacks

School’s back in session – and so are after-school activities! From soccer to singing to scouting, there’s certainly no shortage of kid-centric extracurricular programs where you can spend your time and hard-earned cash. But how do you know which ones are right for your kid? My girls do dance and basketball – and art classes! Yes, we are a very busy on-the-go family when school is in session.

Gauge Their Interests

The best activity for your kid is the one they’re interested in. Older kids are likely to be drawn to what their friends are trying. Toddlers and younger kids may have trouble articulating what they want to try, but there are sure to be clues to look out for. Are they constantly running around? Maybe soccer would be a good fit. Do they like to bop along to the radio in the car? Perhaps they’d appreciate a music class.

Take Advantage of Free Trial Classes

Once you’ve narrowed down your options, see if you can “try before you buy” with a free trial class. Many program facilitators understand that kids can be finicky creatures, with a passion for tap one day and taekwondo the next. And it’s a good idea to decide as a family before the program starts whether you’ll let your kiddo quit before the session is over if they don’t enjoy it or ask them to stick it out to the end to honor their commitment.

Consider Their Personality

Have a shy kid who hides behind mama when meeting new people? An acting class probably isn’t the best idea. As tempting as it can be to use activities to help break kids out of their shell, it’s best to stick with classes that align with a kid’s authentic spirit. The more comfortable they are, the more confident they’ll be – which will hopefully lead to a willingness to try new things later on.

Individual Activities
Independent-minded kids tend to enjoy individual sports, such as gymnastics, tennis, dance or martial arts. Non-sport options could include private lessons in music or art. Benefits of these types of activities include building self-esteem, motor skills and attention/focus.

Group Activities
Socially-minded kids often prefer the camaraderie of team sports, such as soccer, basketball or hockey. Non-sport options could include scouting troops or theater arts. These types of activities emphasize teamwork, communication and discipline.

Think About Your Schedule

How many activities are too many? Well, that depends on the family and the child. Some kids have the interest and energy to take a bunch of different classes while others may feel overscheduled and stressed. Budget and work timetables can also be a factor. Only you can know what’s right for your family, so trust your gut and enjoy the ride!
