My husband is not a picky eater at all. But there are certain meals that top his list. Ones that he could eat all day, every day, and this keto approved breakfast lasagna is one of them. We took a recipe from Maria Emmerich and changed it just a little bit to better fit our family, and this is the final product. My husband literally licks his plate when he is done with dinner – it is THAT good!

As you might already know I have been eating Keto approved since January. Every so often my husband and I cheat a little – a pizza one night, maybe some ice cream another, but we have found and created some AMAZING dinner recipes that have made Keto living super easy for us. A lot of friends and readers have been asking me about Keto, so I decided to share some of my favorite recipes here, starting with Chicken & Cream Cheese Stuffed Peppers. This is a meal even my kids devour – and ask for! Yum!

If you know anything about me, you know that I am a HUGE Marvel fan. You also might know that I recently changed to the Keto way of eating. In just two and a half months, I have lost over thirty pounds and have a whole new lease on life! My energy and confidence are renewed! So when I decided to create a super fun Avengers: Infinity War themed dessert, I knew it had to be Keto friendly so that I could enjoy it too. So my husband and I put our heads together and came up with some amazingly delicious Keto approved Infinity Stone Macarons! Each macaron is only 2.5 net carbs – so enjoy, just don’t share them with Thanos!

As you likely know by now, I have changed my way of eating to a Keto lifestyle. It has been about two months know and I feel better than ever. I knew going in to this that I would be spending nearly two weeks (12 days) at the most magical place on Earth, Walt Disney World. Being Disney Vacation Club members allowed us to be able to escape this snowy, frigid, and downright depressing winter, and enjoy some fun in the sun. It is no secret that Disney is our favorite vacation spot – I mean, it is why we joined the DVC. But there are temptations everywhere for someone trying to cut out carbs – here is how I survived my extended Disney vacation on Keto!

If you haven’t figured out that we are a Disney family by now, there is probably no hope for you. Ha, just kidding. But honestly, we are Disney Vacation Club members and love going “home” two or three times a year. We have several must dos when we go, which includes rides, character meet and greets, and of course, restaurants. One that the entire family looks forward to every visit is breakfast at The Crystal Palace at Magic Kingdom.

As you might know already, I started the Keto Diet with Intermittent Fasting two weeks ago. I have succeeded with no cheating – plus a 30 minute workout (21 day fix) 6 days a week. My weight at the start was 174 pounds (I hate admitting that). Which is significantly more than I care to be. My first goal is 155 (healthy weight according to BMI) and my overall goal is 140.
