One day about a month ago I looked in the mirror and was disgusted. A while back I lost a lot of weight, and was looking and feeling great. Well, life happened and I put back on a lot of those pounds (luckily not all of them). Some of my friends had recently lost a lot of weight on the Keto Diet (high fat, medium protien, low to no carbs), so I decided to do some research. My husband is a science guy, and doesn’t believe anything unless it is proven. And so he decided to do his own research. We both came to the same conclusion – Keto was for us.

Something that I don’t think anyone outgrows, is fruit snacks. My husband and I still love snacking on them, and of course, so do our young daughters. They are snacks for school lunches and snacks for home. We try to include them in just about everything we do – including celebrating holidays. My family and I spend quite a bit of time at The Most Magical Place on Earth – Walt Disney World. Our friends and family know this, and I can’t tell you how many times I have been asked for tips and tricks when visiting. The Garden Grill is always on our must do dining list when we visit Disney World. In my opinion, it is one of the best character meals that there is, for several different reasons. A Smith Family visit to Disney World would just not be the same without it. My in-laws will be hitting Disney World with us in a few months and we knew right away the one breakfast we had to make sure they did not miss is The Garden Grill. I am thrilled to say that we were able to book it – and cannot wait to show them why we love it so much!
My youngest daughter is going off to all day Preschool starting in September. Because of this, we are really taking advantage of the summer. We have traveled around a lot – and have spent many afternoons packing up lunch and having a picnic together. This is one of our favorite things to do on a nice warm day. Living in upstate New York, we have to enjoy the nice weather while we can.
I have always enjoyed cooking, but I am not one for coming up with good recipes. I have many cookbooks, but honestly I can flip through one for an hour and still not know what I want to make for dinner. That is one of the many reasons I love Terra’s Kitchen. They make dinners easy by sending you the ingredients you need – already prepped. They have a good amount of recipes to choose from, but not too many that you can’t decide. And the recipes are really easy to follow.
My daughters are very excited for the new Smurfs movie! They love those little blue guys – and OK, my husband and I do too! We grew up watching them and couldn’t be any more excited about the fact that our girls get to as well! I, personally, am so happy they are still around – and with new content coming out. My girls and I love being creative in the kitchen, especially around the holidays. But let’s be honest, sometimes there just isn’t time to do the baking part. To celebrate Valentine’s Day this year, we decided to go ahead and let Otis Spunkmeyer handle the baking part for us (because they are amazing at it) and we would have fun with the decorating part. We started with some of their mini cupcakes – chocolate and vanilla – and decided to turn them into a Valentine’s Day Cupcake Cake! We purchased some pink strawberry frosting and some sprinkles and got to work. You can do this yourself and it is REALLY easy (and delicious).
Egg salad has always been a favorite in our house, however, the mayonnaise is not very good for you. We decided to come up with a healthier alternative – and it turned out to be amazing! If you are on the Nutrisystem diet, this would count as 1 Powerfuel, 1 Smartcarb, and 1 Extra. If not, this is just a healthy alternative to an egg salad sandwich. Enjoy!
