Easy Low Carb & Keto Bacon Cheeseburger Soup

My family and I have been living the keto lifestyle for the last year, and we couldn’t be happier. One of my favorite things to do is wing it in the kitchen with low carb ingredients. This is how one of our favorite meals was born – Keto Bacon Cheeseburger Soup! YUM! My girls loved this so much that they asked for seconds (totally unheard of with these kids). This recipe is super easy and takes less than 30 minutes. Plus, you can easily customize it to your own tastes.

Ingredients

  • 1 lb. ground beef
  • 5 slices of bacon, diced
  • 4 Tablespoons butter
  • 1 onion, diced
  • 3 cups beef bone broth
  • 1 cup shredded cheddar cheese
  • 8 oz. cream cheese (softened)
  • 8 cherry tomatoes, diced
  • salt to taste
  • pepper to taste

Directions

  1. Put bacon in soup pot and cook on medium heat until fully cooked. Remove bacon for garnish, leave drippings.
  2. Add butter and onions. Cook about 3 minutes, until browned.
  3. Add ground beef and cook until all pink is removed, about 5 minutes. Sprinkle in salt and pepper.
  4. Put softened cream cheese, cheddar cheese, and beef bone broth in the pot and cook over medium heat for about 8 minutes, stirring occasionally, until well blended.
  5. Ladle soup in to bowls, topping with bacon and diced tomatoes.

Servings: 6 servings, 7 carbs each.
