keto bacon cheeseburger soup

Ingredients
  

  • 1 lb. ground beef
  • 5 slices bacon diced
  • 4 Tablespoons butter
  • 1 onion diced
  • 3 cups beef bone broth
  • 1 cup shredded cheddar cheese
  • 8 oz. cream cheese softened
  • 8 cherry tomatoes diced
  • salt to taste
  • pepper to taste

Method
 

  1. Put bacon in soup pot and cook on medium heat until fully cooked. Remove bacon for garnish, leave drippings.
  2. Add butter and onions. Cook about 3 minutes, until browned.
  3. Add ground beef and cook until all pink is removed, about 5 minutes.
  4. Sprinkle in salt and pepper.
  5. Put softened cream cheese, cheddar cheese, and beef bone broth in the pot and cook over medium heat for about 8 minutes, stirring occasionally, until well blended.
  6. Ladle soup in to bowls, topping with bacon and diced tomatoes
