
While no one in my family is a vegetarian, we do try to practice Meatless Mondays. It helps us switch up the menu each week, and come up with some really yummy recipe ideas! One of our favorites has to be this meatless Monday lasagna roll ups recipe. Yum!
Plus, it is really easy to customize and change according to your preferences (my husband LOVES adding basil and some tomato slices!).

Ingredients
As I said above, you can easily customize your lasagna roll ups according to your tastes! Even though this is a meatless Monday recipe, you can even add meats should you choose not to go that route.
- 12 Lasagna Pasta Strips
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1 cup of your favorite pasta sauce
- 15 oz. of ricotta cheese
- 1 cup grated Parmesan cheese
Additional ingredient ideas: ground beef, sausage, fresh basil, tomato slices, onion slices, or green peppers.

Directions
Preheat oven to 375 degrees. Cook lasagna strips according to package. Meanwhile, add all cheeses to a bowl and stir, mixing thoroughly. Optional: Put some shredded cheese aside to top dish with later.

Lay out each cooked pasta strip. Spoon a layer of sauce, and then layer of combined cheeses from bowl on it. This is where you can customize your meal according to your tastes! Sometimes we add tomato slices or even fresh basil leaves.
TIP: If you want to totally skip going meatless, this is a great place to add in sausage or ground beef.

Roll up and place in an oven safe dish that has been sprayed with cooking oil to avoid sticking.

Repeat with each pasta strip. Optional: Top with remaining shredded cheeses.
If you have any remaining sauce, top with that as well. Or put it on the bottom of the dish before adding the rolls. Bake for 25 minutes. Let cool before serving and enjoy!
