Summer is the perfect time to grill! My family grills at least three nights a week, weather permitting, in the summer – often more! Living the low carb and keto life has made us rethink some of our grilling recipes, but not many. Our favorite Grilled Chicken Kabobs are still approved on this diet – and we are thrilled!
You probably know this already but I have two young daughters, who are 6 and 8, and they devour these kabobs! They ask for them at least once a week in the summer, and we usually make them for us when they do. They are super easy, with barely any prep time.
Ingredients
- 4 skinless chicken breasts
- 2 bell peppers
- 2 onions
- 1 zucchini
- State Fair Cornell Chicken Bar-B-Que-Sauce
- kabob skewers
You can totally make your own marinade, but we love Cornell sauce for several reasons. First of all, there is only .5 carbs per serving (1 Tablespoon) and also, it is delicious. It tastes good with the chicken and veggies soaked in it – making it perfect for grilled keto chicken kabobs!
Directions
- Cut up chicken breasts and veggies – and soak in Cornell Chicken BBQ sauce for 2 to 3 hours in refrigerator.
- Put veggies and chicken on the kabob skewers.
- Grill for approximately 20 minutes, or to your preference, on an outdoor grill. Baste once or twice.
- Enjoy!
Theses keto chicken kabobs are really that easy! And trust me when I say they are delicious! You can easily get away with having 4 or 6 kabobs too, due to the low carb count. However, I tend to have 3 when we have these for dinner.
We don’t serve these with a side because we have the meat and veggies, but you could serve with some cauliflower rice if you choose. We have done that once or twice and it is good!
