
I know I am always looking for easy meals, so I like to share ones with you guys every now and then. There is a casserole that I came up with a while back that my husband has been requesting more and more often lately. I was not sure what to call it, but Chicken Cornflake Casserole sounds about right.
What You Need:
- 3 lbs of boneless skinless chicken breast
- 1 can of Cream of Chicken Soup
- 2 cups of Cornflakes
- 1 Green Pepper
- 1/2 stick of Butter
- Oil or Coconut Oil for cooking chicken
Directions:
- Preheat oven to 350 degrees.
- Chop chicken breast in to small squares and cook on stove-top (I cook them in a little bit of coconut oil but feel free to cook them however you normally would).
- Chop up the green pepper.
- Combine chicken, raw peppers, and cream of chicken soup in a large bowl. Stir Well.
- Spread mixture in an 8x8x2 oven safe pan (or similar size).
- Melt butter and soak cornflakes in it.
- Spread cornflakes over the top.
- Bake for 30-35 minutes or until cornflakes are crispy.
