    Chicken Cornflake Casserole

I know I am always looking for easy meals, so I like to share ones with you guys every now and then. There is a casserole that I came up with a while back that my husband has been requesting more and more often lately. I was not sure what to call it, but Chicken Cornflake Casserole sounds about right.

    What You Need:

    • 3 lbs of boneless skinless chicken breast
    • 1 can of Cream of Chicken Soup
    • 2 cups of Cornflakes
    • 1 Green Pepper
    • 1/2 stick of Butter
    • Oil or Coconut Oil for cooking chicken

    Directions:

    1. Preheat oven to 350 degrees.
    2. Chop chicken breast in to small squares and cook on stove-top (I cook them in a little bit of coconut oil but feel free to cook them however you normally would).
    3. Chop up the green pepper.
    4. Combine chicken, raw peppers, and cream of chicken soup in a large bowl. Stir Well.
    5. Spread mixture in an 8x8x2 oven safe pan (or similar size).
    6. Melt butter and soak cornflakes in it.
    7. Spread cornflakes over the top.
    8. Bake for 30-35 minutes or until cornflakes are crispy.
