My husband and I have been low carb and keto for over a year now, and one thing that is hard for us is hosting get togethers. We have a lot of friends and family who do not eat the same way we do, so it is hard to find a good combination of foods to serve – without tempting ourselves. So I came up with this delicious keto appetizer recipe that I think everyone will love – even those that don’t eat low carb. Because come on, it’s bacon. Yum!

Seriously, who doesn’t like bacon? And when you wrap it around sweet (or spicy) peppers, that are filled with a yummy cream cheese mix, you can’t go wrong.

My friends that don’t eat keto or low carb still love these, in fact, they were a hit at our New Year’s Eve party a while back.

    Ingredients

    • 8 oz. cream cheese (softened)
    • 1/2 cup shredded cheddar cheese
    • 1 teaspoon ground cumin
    • 1/2 teaspoon sea salt
    • 12 small peppers
    • 12 slices bacon

This recipe is actually really easy to adjust, according to your own tastes. You can add different spices or flavors to the cream cheese mixture.

And my husband loves to dip these in hot sauce or salsa, while my daughters dips them in Ranch dressing! Of course you can use jalapenos for some added zing, instead of the sweet peppers – or do a combination of both.

Just be sure you know which are which so someone doesn’t get an unexpected surprise!

    Directions

    1. Preheat oven to 350 degrees.
    2. Combine cream cheese, cheddar cheese, cumin, and salt in a bowl. Mix well.
    3. Cut tops off small peppers and clean out the seeds.
    4. Stuff peppers with the mix from the bowl.
    5. Wrap peppers in bacon. Secure with a toothpick.
    6. Bake for 30 minutes.

These are so easy to make and take just a few minutes. Honestly, the hardest part is stuffing the small peppers with the mixture.

You can see in the video below that I use a spoon, but sometimes it is easier to just use your hands.

While these are a great keto appetizer to serve up at a function, you can also make them for yourself while sitting at home. My husband and I do on occasion – they are just so yummy!
