I am counting down the days until Ant-Man comes to theaters and we have officially hit just ONE WEEK! Woohoo! These cupcakes are sure to impress your friends and family whether you are celebrating the movie release, having a Marvel or Superhero themed birthday party, or just entertaining for the summer. The next evolution of the Marvel Cinematic Universe brings a founding member of The Avengers to the big screen for the first time with Marvel Studios’ “Ant-Man” when master thief Scott Lang (Paul Rudd) must embrace his inner hero and help his mentor, Dr. Hank Pym (Michael Douglas), protect the secret behind his spectacular Ant-Man suit from a new generation of towering threats. Ant-Man Cupcakes

Ingredients:
Cupcake
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp ground cinnamon
1/2 cup (1 stick) salted butter, softened
3/4 cup sugar
2 large eggs
1 tsp pure vanilla extract
1/2 cup plus 2 tbl milk
1/2 cup raisins

Frosting

1/2 cup (1 stick) salted butter, softened
4 oz cream cheese, softened
2 cups powdered sugar
1 tsp vanilla extract

Directions

  1. Heat the oven to 375°F.
  2. Line a 12-cup muffin tin with paper liners.
  3. In a medium bowl, mix together the flour, sugar, baking powder, cinnamon, and raisins.
  4. In a large bowl, mix the eggs, butter, and vanilla.
  5. Add the flour mixture and mix until smooth.
  6. Divide the batter evenly among the muffin cups.
  7. Bake until golden brown and a toothpick inserted in the center of a cupcake comes out clean (18 to 20 minutes).
  8. Transfer the cupcakes to a wire rack to cool completely before frosting.
  9. To make frosting: In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.
  10. Frost cupcakes as you wish.
  11. Optional: Mix a little cinnamon & sugar together to sprinkle on top of the frosting. Use extra raisins as ants and cinnamon sticks as branches for more elaborate decorating.
  12. Don’t forget the printables from On the Scene with Mrs. Kathy King! These will be the cupcake wrappers and toppers that you see in my photos.
