Low Carb & Keto Approved Stuffing

One of my favorite things about the holidays is all of the delicious food. And just because I am eating keto now doesn’t mean I have to miss out. This stuffing recipe is totally low carb and keto approved, and makes the PERFECT holiday side dish.

It is so good that I don’t even miss my cornbread stuffing! I promise, even your family and friends that don’t eat keto will love it! If you are looking for a great keto approved turkey recipe, I have one!

Ingredients

For bread:

  • 3 large eggs, separated
  • 1/2 teaspoon cream or tartar
  • 2 tablespoons egg white protein powder

For stuffing:

  • 1 stick of unsalted butter
  • 3 stalks celery, chopped
  • 1/4 cup chopped onions
  • 1/2 teaspoon poultry seasoning
  • 1 pound pork sausage
  • 1 cup chicken bone broth
  • salt
  • pepper

Directions

For the bread:

  1. Preheat oven to 325 degrees.
  2. Whip egg whites with cream of tartar until very stiff. Very slowly add protein powder. Fold yolks into the whipped whites.
  3. Gently scoop 1/3 cup of the dough on to greased baking sheet. Form dough in to a round bun. Repeat to make 6 buns.
  4. Bake for 15 to 20 minutes, until they are golden brown and cooked through. Let cool.

For the stuffing:

  1. Preheat oven to 325 degrees.
  2. Brown butter in skillet over stove. Reserve 1/4 cup.
  3. Add celery, onions, and poultry seasoning to skillet and saute until tender, about 5 minutes. Add sausage and saute until cooked through and no longer pink, about 5 minutes.
  4. Cut bread in to cubes and add to the pan. Pour in broth and mix well. Season with salt and pepper.
  5. Pour mixture in to greased pan and bake for 20 minutes.
  6. Drizzle with 1/3 cup of reserved browned butter.
